Ingredients

1/4 cup (60g) active sourdough starter
1 1/2 cups (360ml) water
4 cups (500g) bread flour
2 tsp salt

Preparation

  1. Feed your starter 4–8 hours before mixing dough.
  2. In a large bowl, mix starter, water, and flour. Let rest 30 minutes.
  3. Add salt and mix to form a sticky dough.

Cooking

  1. Let dough rise at room temperature for 12–18 hours.
  2. Shape into a round loaf and let rise 1–2 hours.
  3. Preheat oven to 450°F (230°C) with a Dutch oven inside.
  4. Score loaf and bake covered for 20 minutes, then uncovered for 25 minutes.

Serving

  1. Cool completely before slicing.
  2. Serve with butter, cheese, or as sandwich bread.

Notes & Tips

  • For a more sour flavor, extend the first rise to 24 hours.
