Tips & Serving Suggestions
- Use a mix of tart and sweet apples for the best flavor and texture.
- Chill your pie dough before rolling for a flakier crust.
- Let the pie cool before slicing to allow the filling to set.
Ingredients
2 1/2 cups (315g) all-purpose flour | 1 tsp salt |
1 tbsp sugar | 1 cup (225g) unsalted butter, cold and cubed |
6-8 tbsp ice water | 6 cups (about 900g) peeled, sliced apples (Granny Smith, Honeycrisp, or a mix) |
3/4 cup (150g) sugar | 2 tbsp all-purpose flour |
1 tsp ground cinnamon | 1/4 tsp ground nutmeg |
1/4 tsp salt | 1 tbsp lemon juice |
2 tbsp unsalted butter, cut into small pieces | 1 egg (for egg wash) |
1 tbsp milk (for egg wash) |
Preparation
- Prepare the pie dough: In a large bowl, whisk together flour, salt, and sugar. Add cold, cubed butter and cut it in with a pastry blender or fork until the mixture resembles coarse crumbs.
- Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Divide dough in half, shape into disks, wrap in plastic, and refrigerate for at least 1 hour.
- Peel, core, and slice the apples. Toss them with sugar, flour, cinnamon, nutmeg, salt, and lemon juice. Set aside.
Cooking
- Preheat oven to 425°F (220°C).
- On a floured surface, roll out one disk of dough to fit a 9-inch pie pan. Place dough in pan, letting excess hang over the edges.
- Fill with apple mixture and dot with butter.
- Roll out the second disk of dough and place over the apples. Trim, fold, and crimp the edges. Cut a few slits in the top to vent.
- Beat egg with milk and brush over the crust for a golden finish.
- Bake for 20 minutes at 425°F (220°C), then reduce heat to 375°F (190°C) and bake for 35-40 minutes more, until the crust is golden and the filling is bubbling.
Serving
- Let the pie cool on a wire rack for at least 2 hours before slicing.
- Serve warm or at room temperature, optionally with vanilla ice cream or whipped cream.
