Ingredients

2 1/2 cups (315g) all-purpose flour
1 tsp salt
1 tbsp sugar
1 cup (225g) unsalted butter, cold and cubed
6-8 tbsp ice water
6 cups (about 900g) peeled, sliced apples (Granny Smith, Honeycrisp, or a mix)
3/4 cup (150g) sugar
2 tbsp all-purpose flour
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
1 tbsp lemon juice
2 tbsp unsalted butter, cut into small pieces
1 egg (for egg wash)
1 tbsp milk (for egg wash)

Preparation

  1. Prepare the pie dough: In a large bowl, whisk together flour, salt, and sugar. Add cold, cubed butter and cut it in with a pastry blender or fork until the mixture resembles coarse crumbs.
  2. Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Divide dough in half, shape into disks, wrap in plastic, and refrigerate for at least 1 hour.
  3. Peel, core, and slice the apples. Toss them with sugar, flour, cinnamon, nutmeg, salt, and lemon juice. Set aside.

Cooking

  1. Preheat oven to 425°F (220°C).
  2. On a floured surface, roll out one disk of dough to fit a 9-inch pie pan. Place dough in pan, letting excess hang over the edges.
