Ingredients

2 1/4 cups (280g) all-purpose flour
1/4 cup (50g) sugar
1/2 tsp salt
1 packet (2 1/4 tsp) active dry yeast
3 large eggs, room temperature
1/4 cup (60ml) warm milk
10 tbsp (140g) unsalted butter, softened
1 egg (for egg wash)

Preparation

  1. In a bowl, combine warm milk, yeast, and a pinch of sugar. Let sit until foamy, about 5–10 minutes.
  2. In a stand mixer bowl, mix flour, sugar, and salt. Add eggs and yeast mixture. Mix until a dough forms.
  3. Knead with a dough hook for 5–7 minutes, then add softened butter a tablespoon at a time until fully incorporated.
  4. Continue kneading until the dough is smooth and elastic (about 10 minutes).
  5. Cover and let rise in a warm place until doubled in size, about 1–2 hours.

Cooking

  1. Punch down the dough and shape into a loaf or rolls. Place in a greased loaf pan or on a baking sheet.
  2. Cover and let rise again until puffy, about 45–60 minutes.
  3. Preheat oven to 350°F (175°C). Brush the top with beaten egg for a shiny crust.
  4. Bake for 25–30 minutes, or until golden brown and cooked through.
  5. Cool on a wire rack before slicing.

Serving

  1. Serve fresh with butter or jam.
  2. Use leftovers for French toast or bread pudding.
